Crafted to honor 130 years of Casa San Matias, the San Matias Tahona Reposado is a rare tribute to tradition, crushed using the same ancient basalt tahona stone that has been at the heart of this legendary Jalisco distillery for over a century.
Produced at Tequila San Matias de Jalisco in Ojo de Agua de Latillas, Jalisco under NOM 1103, this reposado tequila is made exclusively using the tahona method, where mature blue agave hearts are slowly crushed by the massive volcanic stone wheel to extract every nuance of flavor. The resulting juice is then aged three months in American oak barrels, striking a well-balanced harmony between pure agave character and gentle oak influence.
- Nose: Fresh cooked agave with subtle earthy, mineral notes carried forward from the tahona process, rounded by soft vanilla and light wood.
- Palate: Smooth and balanced, with roasted agave sweetness, hints of caramel, and a mild spice that reflects both the traditional production method and the brief oak aging.
- Finish: Clean and lingering, with a warm agave earthiness and a touch of oak that fades gracefully.
