All good things come to those who wait. Premium expressions in any beverage category often have a longer timeline to their production but where that time is spent varies from bottle to bottle. Whiskeys and wines are made from crops that are harvested on an annual basis where agaves used for Tequila take 7 years to mature. Tequilas and whiskeys are similar in that once the base juice is created, it heads directly off to the barrel room where it rests until ready to be bottled whereas wine is rested in barrels and then requires further resting in the bottle called cellaring.
