Soil Differences for Agave

Agave Highlands
Soil composition matters for agave growing just like it does grape growing for wine. Agaves love the dry, fertile volcanic soil of both Jalisco. While specific appellations within each region will differ, the soils in the Highlands and Valley are thought to be different. The Highlands, soft, iron and mineral rich, soil while the Valley has rockier, dryer, soil, rich silica and potassium. One of these photos was taken in the Los Altos town of Jesus Maria, while the other was taken in the town of Tequila in The Valley. Can you guess which one?
