A masterclass in ensamble mezcal, Bozal Ensamble brings together three wild and cultivated agaves into a single, seamlessly balanced expression from the storied valleys of Oaxaca.
Crafted under NOM 472 by master distillers Marcelino and Onofre Ortiz in Miahuatlan y Etla, Oaxaca, this mezcal is built from Espadin, Mexicano, and Barril agaves slow-roasted in an earthen pit oven, then crushed by a horse-drawn tahona wheel before fermentation and distillation in traditional copper pot stills.
- Nose: Inviting and bright with ripe pear, green apple, allspice, and a gentle ribbon of vanilla that signals the balance to come.
- Palate: Barril takes the lead with vibrant lime zest, stone fruit, and a grounding note of green pepper that keeps the palate intrigued.
- Finish: Long and warm with the viscous signature of Mexicano agave, closing on a soft mineral note that lingers beautifully.
