  • Created by Gilberto Aquino García who acquired 338 piñas of ripe Tobalá harvested from red, white, and rocky earth from San Andrés Paxtlán, Miahuatlán, a community located at about 2,000 meters above sea level in the oak, pine, and madrona populated mountains of the Sierra Madre del Sur
  • A total of nearly three tons of wild Tobalá was used to produce 225 liters at 47.1% ABV in April of 2022, and released in Spring 2023
  • The aromas and flavors are extremely representative of what a well-made Tobalá from the region should taste like. The complex and balanced intermingling of savory minerals and earth, tannins, and ripe fruit is a reminder why Tobalá has remained such a prized plant and spirit throughout Miahuatlán and much of Oaxaca.

NETA works closely with over twenty small, family producers from the southern valleys and hills of Miahuatlán, Oaxaca, many of whom are members of the cooperative Grupo Productor Logoche. Situated at the southern tip of the Central Valleys and the foot of the Sierra Madre del Sur mountains, the area is renowned for the strong character of its people, its diverse landscapes, and the rich agricultural and culinary traditions that have been maintained throughout generations. As such, the region has preserved its reputation for producing some of the finest spirits in Mexico. Each production is unique and bottled at still-strength by members and family members of the co-op and the quantity produced is relative to the number of agaves cooked in an oven and their respective yield

Logoche, Miahuatlán

Logoche, a small community near Miahuatlán de Porfirio Díaz in Oaxaca's Sierra Sur region, is renowned for its rich mezcal-making heritage. The village is home to Grupo Productor Logoche, a cooperative of local palenqueros and maguey growers dedicated to preserving traditional mezcal production methods. These artisans harvest agave under the full moon, slow-roast the piñas with mezquite and local acacia woods, and utilize sabino wood fermentation tanks, ensuring each batch reflects the unique terroir of the region. Logoche's commitment to ancestral techniques has positioned it as a significant contributor to Oaxaca's esteemed mezcal culture, offering visitors an authentic glimpse into the craftsmanship behind this iconic spirit.
