- Brick ovens for 48 hours
- Roller mill extracted
- Open-air fermentation, 70% rum 30% champagne yeast mix
- Rested for 45 days in stainless steel and oxygenated, then finished for 45 days in California red wine barrels
- 40% ABV/ 80 Proof /750mL per bottle
Tasting Notes
Palate: medium bodied and creamy with floral notes backed with crisp citrus, and pops of red fruit. Tangy backbone with a touch of minerality.
Finish: velvety long finish
