About Irlandés Tequila

Irlandés was founded by Colm O'Faolain, an Irishman long based in the San Gabriel Valley, to honor the San Patricios, the Irish battalion that fought alongside Mexico in 1847. One of its soldiers was anointed as he lay dying with holy water carried from a sacred well in Ireland, and Irlandés is made with water from that same well. Farmer-direct Blue Weber agave from Los Altos, averaging at least six years old, is cooked in autoclaves at the El Mexicano distillery in Arandas. It ferments with natural French yeast while classical music plays, then is double distilled.
