About Señor Sotol

Señor Sotol is made by maestro sotolero Juan Manuel Conde at an old hacienda in San Nicolás de Acevedo, high in the Durango mountains near Nombre de Dios. Wild Dasylirion is harvested by axe, cooked in underground pits lined with volcanic rock, and fermented naturally with mountain spring water. The Ensamble is double distilled in small copper stills, while the Ancestral runs through clay pots with a Filipino style wooden top. The name honors a legendary smuggler who carried sotol across northern Mexico until it was legalized in 1991, and the labels are made from agave waste.
