Bozal Jabali Mezcal is one of the most sought-after expressions in the world of wild agave spirits, crafted from the rare jabali agave that grows untamed in the highlands of Oaxaca. This mezcal is a testament to the art of traditional production, offering a complexity that rewards every sip.

Jabali agave is notoriously difficult to work with, known for its tendency to foam and overflow during fermentation, which demands exceptional skill and patience from the maestro mezcalero. Bozal honors this challenge by adhering to ancestral methods, using wood-fired pit roasting, natural fermentation, and small-batch distillation to preserve the wild, untamed character of the agave. The result is a mezcal that feels genuinely connected to the land it comes from.

  • Nose: Wild and herbaceous aromas open with earthy minerality, dried fruit, and a smoky depth layered beneath floral and vegetal notes unique to jabali agave.
  • Palate: Bold and expressive, with roasted agave sweetness, green herbs, tropical fruit, and a savory, almost funky complexity that sets jabali apart from more common mezcal expressions.
  • Finish: Long and warming, with lingering smoke, spice, and a mineral earthiness that fades slowly and memorably.

Bozal Jabali Mezcal shines when sipped neat, but its bold character also holds up beautifully in a Mezcal Negroni or a smoky Oaxacan Old Fashioned, where its wild agave notes elevate the entire drink.

Serve neat or with a small splash of water to open up the aromatics. Bozal Jabali Mezcal is produced from wild-harvested jabali agave, a rare and distinctive variety that makes this expression a true collector's pour for mezcal enthusiasts.

Bozal, Spanish for wild or untamed, bottles mezcal from family palenques in Oaxaca, Guerrero and Durango, much of it from wild agave on steep, hard-to-reach hillsides. Agave is roasted in earthen pits, crushed by stone tahona or wooden mallet, fermented open-air with natural yeast and distilled twice in copper or clay. The range runs from Ensamble and Single Maguey bottlings to Sacrificio mezcals distilled with meat or fruit and clay-pot Reserva releases. For every maguey harvested, two are planted in a mountainside nursery and returned to the wild.
LOCATION

Sola de Vega, Oaxaca

Villa Sola de Vega sits at about 1,440 meters in Oaxaca's Sierra Sur, southwest of Oaxaca City on the road toward Puerto Escondido. The land is rugged, with oak and pine forest up high, scrub in the lower valleys, an average temperature near 18°C and the Sola River running through. Wild agaves such as Tobalá, Jabalí and Coyote grow across these slopes. The region is known for ancestral mezcal, still distilled in small clay pots by many local families.
