A genuine first in the world of tequila, Cambio's Cellar Series Sur Lie Anejo #5 was aged with its own lees and agave fibers directly in a neutral White Burgundy barrel, a winemaking technique never before applied to tequila at this level. This Sip Tequila exclusive is a single-barrel, limited release of just 250 bottles, unfiltered and unapologetic.
After distillation, Cambio introduced the spent lees and agave fibers back into a neutral White Burgundy cask alongside the spirit, then allowed the whole ensemble to rest for 15 months. The sur lie aging method, borrowed from the cellars of Burgundy and transplanted into the traditions of Mexican agave spirits, adds a textural richness and complexity that standard anejo production simply cannot replicate. With no filtration and a natural finish, every nuance of the process is preserved in the bottle.
- Nose: Expect the hallmarks of an aged agave spirit elevated by creamy, yeast-driven depth, with hints of roasted agave, toasted oak, and a subtle brioche-like quality from the lees contact.
