This batch was aged in 2 different barrels at slightly different ages. 1 french oak used previously for our Reposado, the other in spiced gin barrels. This particular batch was made at extremely high sugar levels with extraordinary agave to start fermentation. Then fermented at incredibly low temperatures, roughly 1/3 the temperature of traditional tequilas. Next, we distilled the tequila and only captured the rarest part- the heart, discarding all of the "heads and tails" that would normally be included in the batch.
