Casa Azul Anejo is a certified organic tequila that earns its premium status the slow way, spending over 15 months resting in American White bourbon casks until every sip speaks of careful craft and patience.

Produced at La Roca Distillery under NOM 1646, Casa Azul is made from 100% USDA Certified Organic blue agave using natural open-top fermentation with wild yeast, a traditional process that coaxes remarkable depth and character from the plant before the spirit ever touches wood.

  • Nose: Inviting hints of vanilla and oak layered with rich dark chocolate
  • Palate: Fully bodied and luxuriously sweet, with notes of leather, cacao, and vanilla unfolding in waves
  • Finish: Soft and smooth with a whisper of smoke that lingers just long enough

Casa Azul Anejo shines in an Old Fashioned, where its bourbon-cask sweetness and smoky finish find a natural home, and it holds up beautifully in a Tequila Manhattan for those who appreciate a spirit that can carry a cocktail with confidence.

Best enjoyed neat or over a single large ice cube to let the full complexity open up. Casa Azul Anejo is crafted from 100% organic blue agave at NOM 1646, La Roca Distillery.

NOM: 1646
Casa Azul Orgánico was founded by Lance Collins and is made with the Montes family, third-generation agave farmers turned distillers, at their Destiladora La Roca (NOM 1646) in Amatitán, Jalisco. Its USDA Certified Organic blue agave grows six to seven years on a single estate in volcanic soil, then is hand cut, roasted two to three days in stone ovens and crushed with a roller mill. Wild yeast ferments the juice in open tanks, and it is distilled twice in stainless steel stills with copper coils. In 2025 production moved to La Roca from the family's Las Américas distillery.

Amatitán sits in the Tequila valley of Jalisco, a short drive southeast of the town of Tequila. Half of the municipality is flat farmland, mostly red clay soils over volcanic basalt, and blue agave is its main crop in a hot, dry climate with summer rains. Local tradition holds that tequila was first distilled in the nearby Tecuane barranca, where an early distillery site is still a local landmark. Amatitán lies within the Agave Landscape that UNESCO named a World Heritage Site in 2006.
