Meet the spirit that redefines what barrel aging can do beyond tequila and mezcal: Desert Door Oak Aged Texas Sotol is a rare, two-year journey through charred virgin American white oak that transforms the wild Texas plains into something extraordinary in the glass.

Desert Door Texas Sotol is crafted from the sotol plant, a species entirely distinct from agave, harvested from the rugged high desert terrain of West Texas. After distillation, the spirit rests for two years in charred virgin American white oak barrels, layering the clean, herbaceous character of the original expression with earned depth, warmth, and complexity that only time and craft can produce.

  • Nose: Fresh desert herbs and green botanicals give way to warm vanilla, toasted oak, and a whisper of caramel, reflecting both the wild Texas landscape and the influence of the barrel.
  • Palate: Smooth and richly layered, with notes of roasted sotol, dried fruit, brown sugar, and a gentle earthiness that distinguishes this spirit from any tequila or whiskey in your collection.
  • Finish: Long and warming, with lingering oak spice, a touch of dark chocolate, and the clean, herbal signature that makes Texas Sotol unmistakable.

Desert Door Oak Aged Texas Sotol shines in a Sotol Old Fashioned, where the barrel notes complement a rich demerara syrup and aromatic bitters, and works beautifully in a Oaxacan-style Negroni variation that swaps out mezcal for a uniquely Texan twist.

Best enjoyed neat or over a single large ice cube to let the oak-aged complexity unfold fully; crafted from wild-harvested sotol plant in West Texas, this expression is a landmark bottle for any serious agave and American craft spirits enthusiast.

Desert Door Texas Sotol is made at the Desert Door Distillery in Driftwood, Texas, a company started by three military veterans. Sotol is a desert succulent, not an agave, and Desert Door uses Dasylirion texanum harvested wild on West Texas ranches. Only the heart is cut, so the roots can regrow, and no water, fertilizer or pesticide is used. The hearts are cooked in proprietary ovens, fermented with organic yeast and distilled in a hybrid still. The idea took hold when co-founder Judson spotted the plant in the Trans-Pecos and his uncle told him Texans moonshined it during Prohibition.
LOCATION

Driftwood, Texas

Driftwood is a small community in northern Hays County, in the Texas Hill Country about 24 miles southwest of downtown Austin. The Hill Country sits on limestone, with live oaks, ranch land and wineries along its back roads. Sotol made here comes from wild Dasylirion harvested in the Chihuahuan Desert of West Texas, then cooked, fermented, distilled and aged in Driftwood. Texas sotol sits outside Mexico's sotol denomination of origin, which covers Chihuahua, Coahuila and Durango.
