El Acabo High Proof Raicilla is a bold, uncompromising expression from one of Mexico's most exciting agave spirit traditions. Crafted for those who seek intensity and authenticity in every pour, this raicilla commands attention from the first sip.

Produced in the rugged coastal and sierra regions of Jalisco, raicilla holds a distinct identity apart from its agave spirit cousins. El Acabo is made using traditional small-batch methods, with agave hearts roasted in earthen pits or wood-fired ovens, fermented naturally with wild yeasts, and distilled in clay or copper pot stills depending on the maestro's hand. The high proof expression amplifies every layer of the production process, delivering a spirit with remarkable depth and raw character that reflects the terroir of Jalisco's diverse landscape.

  • Nose: Roasted agave, green herbs, tropical fruit, and a whisper of smoke with earthy mineral undertones
  • Palate: Rich and full-bodied with flavors of charred pineapple, wild grass, citrus zest, brine, and a warming spice that builds steadily
  • Finish: Long and lingering with dried herbs, smoked wood, and a clean heat that fades slowly into a satisfying earthiness

El Acabo High Proof Raicilla holds its own in bold cocktails like a Raicilla Paloma or a smoky Spicy Margarita, where its herbal intensity and proof strength elevate the drink without getting lost behind mixers.

Best enjoyed neat or with a single ice cube to open up its aromatics, El Acabo High Proof Raicilla is made from agave plants native to the Jalisco region of Mexico, a must-have for any serious agave spirits collection.

Distillery: Taberna Tres Gallos
El Acabo is made by Taberna Tres Gallos at the Hacienda de Ahuacatepec, a 350-year-old estate in Atenguillo, in the mountains of western Jalisco. Brothers Álvaro, Bernardo and Alejandro Fernández Labastida founded the distillery to share their region's raicilla. They grow Maximiliana agave from seed in their own nursery, cook the piñas for about three days, and distill twice. The name honors the celebration once held at the hacienda when the harvest ended. The team burns only firewood from dead trees and keeps a sanctuary for the Mexican burro.
