Purasangre, Spanish for thoroughbred, has been made since 1991 at Tequileña (NOM 1146) in Tequila, Jalisco, under master distiller Enrique Fonseca. The agave is grown by the Fonseca family in Atotonilco El Alto, above 5,200 feet, and harvested fully mature with high sugar. Piñas cook slowly in low-pressure autoclaves, then a screw mill and roller mill extract the juice for fermentation with deep well water. Each batch is distilled twice, first in a stainless steel pot still and then in copper. Fonseca, a fourth-generation agave farmer, bought the distillery from Bacardi in 1989 and learned distilling and aging in Scotland and France.
