A true collector's pour, this Sip Exclusive single barrel reposado was hand selected by Laurence Spiewak and Sip's Carolyn Kissick from the cellars of NOM 1530 in San Francisco de Asis, Jalisco. It represents everything a thoughtfully curated limited release should be: expressive, site-specific, and impossible to replicate.
Crafted under the direction of Master Distiller Pedro Hernandez Barba, this reposado is built on a foundation of open-air fermentation without fibers, tahona-crushed agave, and stainless steel distillation, preserving the raw character of the highlands terroir. It then rests approximately 8 months in American white oak, gaining warmth and depth while keeping the agave front and center.
- Nose: Bright and inviting with fresh agave, light vanilla, and a whisper of toasted wood.
- Palate: Smooth and layered, with cooked agave sweetness, subtle caramel, and a touch of baking spice that reflects the time spent in oak.
- Finish: Warm and lingering, with gentle oak tannins and a clean herbal note that fades beautifully.
This reposado shines on its own over a large ice cube, and its balanced structure makes it equally at home in a Reposado Old Fashioned or a Paloma that lets the agave speak for itself.
