Desert Door Original Texas Sotol is not tequila, not mezcal, but something altogether its own: a smooth, wild-harvested spirit born from the rugged Chihuahuan Desert scrublands of West Texas.

Founded by three military veterans who first discovered the sotol plant growing across the high desert plains, Desert Door distills its spirit from wild sotol, a plant distinct from agave that has sustained West Texas communities for centuries. Each batch is harvested by hand from the native desert landscape, honoring a tradition that stretches from indigenous use to Prohibition-era ingenuity, and crafted at their distillery outside of Driftwood, Texas into a spirit that is cleaner and more approachable than mezcal yet wilder in character than most tequilas.

  • Nose: Fresh green herbs, desert wildflowers, and a whisper of pine with a clean, grassy sweetness
  • Palate: Light and silky with notes of cucumber, mint, and gentle earthiness balanced by a subtle fruity brightness
  • Finish: Smooth and lingering with a delicate herbal quality and none of the heat you might expect from a desert-born spirit

Desert Door Original shines in a sotol mule built with ginger beer and lime, and it brings a distinctly Texan character to a simple sotol spritz with tonic and fresh citrus.

Best enjoyed neat or over a large cube to let its wild-harvested character open up; Desert Door Original Texas Sotol is made from the sotol plant harvested from the Chihuahuan Desert region of West Texas.

Tasting Notes

Aroma: Bright vanilla and green grass, a lot like a premium tequila on the nose.

Desert Door Texas Sotol is made at the Desert Door Distillery in Driftwood, Texas, a company started by three military veterans. Sotol is a desert succulent, not an agave, and Desert Door uses Dasylirion texanum harvested wild on West Texas ranches. Only the heart is cut, so the roots can regrow, and no water, fertilizer or pesticide is used. The hearts are cooked in proprietary ovens, fermented with organic yeast and distilled in a hybrid still. The idea took hold when co-founder Judson spotted the plant in the Trans-Pecos and his uncle told him Texans moonshined it during Prohibition.
LOCATION

Driftwood, Texas

Driftwood is a small community in northern Hays County, in the Texas Hill Country about 24 miles southwest of downtown Austin. The Hill Country sits on limestone, with live oaks, ranch land and wineries along its back roads. Sotol made here comes from wild Dasylirion harvested in the Chihuahuan Desert of West Texas, then cooked, fermented, distilled and aged in Driftwood. Texas sotol sits outside Mexico's sotol denomination of origin, which covers Chihuahua, Coahuila and Durango.
