NOM: 1146
Don Fulano comes from the Fonseca family, agave farmers in the Jalisco Highlands for five generations, and is made by maestros tequileros Enrique Fonseca and Sergio Mendoza at La Tequileña in Tequila. Mature agave from the family's fields is steamed at low pressure, pressed in a screw press and fermented with proprietary yeast and volcanic spring water. Most of each blend is double distilled in copper alembics, with a smaller share from a copper Coffey still. Aged expressions rest in French Limousin and Nevers oak that once held French wine.

Map of Jalisco, Mexico, with Tequila marked

Tequila is the town that gave the spirit its name, set at about 1,180 meters in the valley below the Tequila volcano, some 60 km northwest of Guadalajara. Blue agave covers the volcanic soils between the volcano and the canyon of the Río Grande de Santiago, a landscape UNESCO named a World Heritage Site in 2006. Large-scale agave distilling began here around 1600, and several of the oldest working distilleries in Mexico still operate in town. Tequila was named a Pueblo Mágico in 2003.
