El Bandido Yankee was founded by former pro athletes Jim Morris and Chris Chelios and is made at El Viejito, founded in 1937 as the first distillery in Atotonilco el Alto. Master distiller Karina Rojo works with Blue Weber agave from the Jalisco Highlands, harvested at about eight years, cut by hand and slow roasted for 40 hours in stone ovens. The tequila is twice distilled in small copper pot stills, then oxygenated for a velvety texture. The name comes from Butch Cassidy and the Sundance Kid, who were called El Bandido Yankees in Bolivia.
