Raicilla is one of Mexico's most storied and least understood agave spirits, and Estancia Agave Raicilla offers a compelling entry point into its wild, expressive character. Rooted in the traditions of Jalisco, this spirit carries the untamed energy that has made raicilla a favorite among adventurous agave enthusiasts.

Raicilla predates modern mezcal regulation and occupies its own distinct category within Mexico's agave spirit landscape. Produced under traditional methods that vary from maestro to maestro, Estancia's expression reflects the artisanal, small-batch spirit that defines the category, drawing on agave varieties and techniques native to the rugged terrain of Jalisco and its coastal sierra.

  • Nose: Expect the hallmark raicilla character: bright tropical fruit, herbal greenness, and an earthy wildness that sets it apart from both tequila and mezcal.
  • Palate: Bold and layered, with notes of citrus zest, fresh agave, and a savory minerality that rewards slow sipping.
  • Finish: Long and pleasantly rustic, with lingering herbal and floral echoes that speak to the spirit's artisanal roots.

Estancia Agave Raicilla shines in a Raicilla Paloma, where grapefruit soda and a salted rim play beautifully against its citrus-forward character. It also holds its own in a simple Raicilla Highball with sparkling water and a squeeze of fresh lime, letting the spirit's complexity do the work.

Best enjoyed neat or over a single large ice cube to open up its aromas. Estancia Agave Raicilla is a genuine expression of Jalisco's agave heritage, offering something truly distinct for the curious spirits explorer.

Master Distiller: Alfredo Salvatierra
Estancia makes raicilla in La Estancia de Landeros, a town in the Sierra Madre Occidental of western Jalisco. Maestro Alfredo Salvatierra roasts wild Agave maximiliana in adobe mamposteria ovens heated with oak, then ferments it in clay amphorae from Tonalá and oak vats. The raicilla is distilled twice in copper and stainless steel pot stills. The project is led by Rio Chenery, whose family background in Australian wine led him to the amphorae. The raicillero Don Gerardo Peña, known as El Lobo, sold them their first Maximiliana, and they have double distilled from the start, as he does.
