- This batch was made with 100% capón - Bicuixe capón -two year- (Agave karwinskii var.) and Espadín capón -one year (Agave angustifolia var.) - harvested from rocky white and red tierra cascajo
- November 2021 production / Spring 2023 release / 200L produced
- Approximately 900kg of two-year capón wild Bicuixe plants and nearly equal weight of one-year capón Espadín were harvested in the days surrounding the full moon of late September 2021, and crafted into 200L of a sweet, savory, and complex batch typical of the region.
