One of only 500 bottles in existence, Yola Mezcal Jabali is a rare wild-release mezcal built around one of the most elusive agaves in all of Oaxaca. The bottle itself is a work of art, designed by celebrated artist Barbara Sanchez-Kane, but the spirit inside is the real treasure.
Produced in San Juan del Rio, Oaxaca under NOM 524, this limited expression sources foraged Jabali agave grown entirely in the wild rather than cultivated. Jabali is notoriously difficult to work with, which is part of what makes each bottle so exceptional and so sought after by serious mezcal collectors and enthusiasts alike.
- Nose: Herbal and earthy with soft smoke and delicate hints of citrus
- Palate: Full-bodied and creamy with vegetal depth, fresh cucumber, building spice, and a thread of smoke woven throughout
- Finish: Bright, warm, and evolving, leaving you reaching for another sip
Yola Jabali is bold enough to stand alone but brings serious complexity to a Mezcal Negroni or an Oaxacan Old Fashioned, where its wild character can play against sweeter or bitter counterparts.
Best enjoyed neat or with a single large ice cube to let the layers open up. A wild Jabali agave mezcal from San Juan del Rio, Oaxaca, bottled at 90 proof.
