Born from a private collection and released to the world in batches of just 2,000 bottles annually, the 123 Organic Tequila Extra Anejo Diablito is a rare expression of what happens when a master distiller makes tequila purely for himself.
Crafted by Master Distiller David Ravandi at NOM 1480 in Amatitan, Jalisco, this extra anejo is aged 40 months in new French Limousin oak barrels, drawing extraordinary depth from certified organic blue agave grown in the highlands of Jalisco. The Diablito on the label is no coincidence; it signals the relentless pursuit of perfection that defines every bottle.
- Nose: Cooked agave, warm vanilla, and a lift of black pepper open with inviting complexity.
- Palate: Caramelized roasted agave leads into layers of baking spices, vanilla, and a bright citrus note, rich and nuanced yet remarkably easy drinking.
- Finish: Long and lingering, with gentle tannins and a touch of honey that rewards patience.
The Diablito holds its own in an Old Fashioned or a Tequila Manhattan, where its oak-driven depth and spice play beautifully against a good bitters and sweet vermouth.
