Founded in 1950 by Don Alfonso Jimenez Rosales, a co-founder of Herradura, Caballito Cerrero carries a lineage that predates the modern Tequila NOM. Today the Santa Rita Distillery is stewarded by 14th and 15th generation Tequileros, and because it relies on agave chato, a cousin of espadin once widely used before blue agave became the industry standard, the spirit is now classified as a Destilado de Agave. The Azul + Chato Ensamble pairs that heritage varietal with blue agave, honoring both the brand's roots and the broader mezcal tradition of blending agaves to achieve complexity.
