Crafted in small batches from 100% Blue Weber agave grown in the Jalisco Highlands, Espolon takes an unconventional approach by quartering its agave pinas rather than halving them, maximizing surface area during cooking and drawing out richer, more concentrated flavor. The juice then rests for a minimum of 12 months in ex-Wild Turkey Bourbon barrels, layering the natural character of Highland agave with warm, wood-driven complexity.
- Nose: Peppery agave spice, butterscotch, vanilla, and a lift of bright citrus
- Palate: Smooth and rounded, with caramel, toasted oak, baking spice, and a subtle sweetness carried from the bourbon barrel
