Produced under NOM 1146 in the heart of Tequila, Jalisco, this extra anejo is the result of a slow, hand-crafted process that yields significant osmotic loss during aging, what distillers call the angels' tears, the quiet inspiration behind the name itself. German Gonzalez then blends and bottles the final spirit with precision, coaxing a rare layered complexity from the triple-barrel maturation.
- Nose: Cooked agave, cognac warmth, spicy-sweet oak, vanilla, and caramel.
- Palate: Dried cherries, dark chocolate, roasted agave, vanilla, salted caramel, peppery oak heat, and a whisper of chipotle pepper.
- Finish: Velvety and smooth with a slow-building spicy warmth reminiscent of fine cognac or Scotch whisky. It is dangerously easy drinking, so pace yourself.
