Caballito Cerrero Chato Reposado is a rare and traditionally crafted mezcal that honors the rugged spirit of wild agave production in Jalisco. Etched with artisan detail and presented with a gift bag, this bottle is as striking on the shelf as the liquid inside is in the glass.

Produced by one of Mexico's most respected small-batch mezcal producers, Caballito Cerrero draws on generations of knowledge rooted in the highlands of Jalisco, where the agave Angustifolia Haw grows wild and is harvested with deep respect for the land. The reposado expression rests in oak, softening the spirit's natural intensity while preserving the earthy, smoky character that defines authentic mezcal.

  • Nose: Wild agave, roasted earth, light smoke, and a warm undercurrent of vanilla from the oak rest
  • Palate: Rich and textured, with cooked agave sweetness, gentle wood spice, dried herbs, and a hint of citrus peel
  • Finish: Long and warming, with lingering smoke, soft oak tannins, and a clean mineral quality

Caballito Cerrero Chato Reposado shines in a Mezcal Negroni, where its earthy depth plays beautifully against sweet vermouth and bitter aperitivo. It also elevates a classic Mezcal Old Fashioned, letting the oak-kissed agave character take center stage.

Best enjoyed neat or over a single large ice cube to let the full complexity unfold. Crafted from wild Angustifolia Haw agave in the highlands of Jalisco, this is a mezcal built for those who seek something genuinely distinctive.

Caballito Cerrero is made by the Jiménez family at Fábrica Santa Rita, built in 1873 in the Barranca de Tecuane in Amatitán. Don Alfonso Jiménez Rosales left Tequila Herradura in 1950 to start it, naming it for the untamed horse that needs no horseshoes. Mature agave from Amatitán is cooked in masonry ovens, crushed in a three-roller mill and fermented for seven days in open steel tanks with wild yeast and spring water. It is distilled first in a steel still, then in copper. The family now bottles it as Destilado de Agave rather than tequila, carrying on fifteen generations of agave work.

Amatitán sits in the Tequila valley of Jalisco, a short drive southeast of the town of Tequila. Half of the municipality is flat farmland, mostly red clay soils over volcanic basalt, and blue agave is its main crop in a hot, dry climate with summer rains. Local tradition holds that tequila was first distilled in the nearby Tecuane barranca, where an early distillery site is still a local landmark. Amatitán lies within the Agave Landscape that UNESCO named a World Heritage Site in 2006.
