Master Distiller Aaron Alva Sanchez has crafted a spirit that defines the house style: layered, expressive, and unmistakably Fosforo.
Rooted in traditional Pueblan craft, this mezcal begins with tobala agave slow-roasted in underground earthen pits for five to eight days, unlocking deep complexity before a ten-day to two-week open-air fermentation. The wash is then double distilled, honoring the time-intensive methods that have long distinguished San Nicolas Huajuapan as a source of exceptional artisanal mezcal.
