Aged in glass vessels with living agave penca leaf, Fosforo Tobala Penca Mezcal is a rare expression that bridges traditional craft and quiet innovation from the highlands of Puebla. This is mezcal as it was meant to be experienced: unhurried, layered, and deeply rooted in place.
Produced by Master Distiller Aaron Alva Sanchez in San Nicolas Huajuapan, Puebla, this tobala mezcal begins with agave roasted for five to eight days in underground earthen pits, followed by a ten-day to two-week open-air fermentation. The spirit is then double distilled and rested for one to three months in glass vessels alongside agave penca leaf, a finishing technique that gently reintroduces the plant's green, herbaceous character to the final spirit.
- Nose: Earthy and inviting, with the natural sweetness of slow-roasted agave and a whisper of wild herbs carried on clean mountain air.
- Palate: Rounded notes of cooked agave, caramelized pineapple, and fresh herbs give way to a subtle smoky-smooth finish with a full, satisfying mouthfeel.
- Finish: Long and gently smoky, with lingering herbal warmth and the soft sweetness of the penca resting on the palate.
Fosforo Tobala shines served neat or over a single large ice cube, allowing its complexity to open slowly. For cocktail lovers, it brings uncommon depth to a Mezcal Negroni or a Oaxacan Old Fashioned, where its herbaceous smoke plays beautifully against bitter and sweet notes.
Best enjoyed neat or lightly chilled to honor its craft. Fosforo Tobala Penca Mezcal is made from wild tobala agave, sourced and distilled in San Nicolas Huajuapan, Puebla.
