A limited release that redefines what barrel aging can achieve, the Volans Anejo is a masterclass in layered complexity from the highlands of Jalisco.


Under the guidance of Master Distiller Felipe Camarena at NOM 1579 in Jesus Maria, Los Altos, this anejo begins with a blanco built from three tahona-crushed tequilas, each made with a different water source: deep well, spring, and rainwater. The spirit is then aged in a thoughtfully curated combination of American, French, and German oak barrels across first, second, and third fills, building remarkable depth while preserving the soul of the agave.


  • Nose: Warm vanilla, cooked agave, and toasted oak
  • Palate: Rich sweet caramel, layered oak, and a gentle lift of baking spices
  • Finish: Long and smooth with lingering oak and subtle sweetness

The Volans Anejo shines in an Old Fashioned, where its caramel and spice notes are beautifully framed, and works equally well in a Tequila Manhattan for those who appreciate a spirit-forward pour.


Best enjoyed neat or over a large cube to let the complexity unfold; this Los Altos highland tequila is crafted from blue weber agave and represents one of the most distinctive limited releases in the Volans lineup.

Named after the constellation of the flying fish, Volans Tequila has truly found its place amongst the stars in the world of Tequila, and in the Sip Tequila portfolio. Volans is made at the El Pandillo Distillery in Jesus Maria, Jalisco by Master Distiller Felipe Camarena using highland agave from the local areas of Los Altos, grown at 6,800 feet in altitude. Important to the flavor and methodology in making Volans is the water source used in the process. El Pandillo harvests rainwater, in addition to sourcing water from a deep well, and local natural spring.
