A limited release that redefines what barrel aging can achieve, the Volans Anejo is a masterclass in layered complexity from the highlands of Jalisco.
Under the guidance of Master Distiller Felipe Camarena at NOM 1579 in Jesus Maria, Los Altos, this anejo begins with a blanco built from three tahona-crushed tequilas, each made with a different water source: deep well, spring, and rainwater. The spirit is then aged in a thoughtfully curated combination of American, French, and German oak barrels across first, second, and third fills, building remarkable depth while preserving the soul of the agave.
- Nose: Warm vanilla, cooked agave, and toasted oak
- Palate: Rich sweet caramel, layered oak, and a gentle lift of baking spices
- Finish: Long and smooth with lingering oak and subtle sweetness
