Bozal Chino Verde Mezcal is a rare and captivating expression built around one of the most elusive agave varieties in artisanal mezcal production. Rooted in the wild-harvest tradition that defines Bozal's philosophy, this bottling offers a genuinely singular window into the complexity that only uncommon agave can deliver.

Bozal Mezcal has long championed small-batch, traditionally crafted spirits sourced from some of Mexico's most biodiverse agave-growing regions. The Chino Verde agave, a lesser-known and slow-maturing variety, lends this mezcal a distinctive character shaped by its environment and the hands-on production methods passed down through generations of maestros mezcaleros. Stone-pit roasting, tahona milling, and open-air fermentation are hallmarks of the process behind expressions like this one.

  • Nose: Earthy and herbaceous aromas with layers of roasted agave, green botanicals, and a subtle whisper of smoke
  • Palate: Rich and savory with notes of cooked agave, wild herbs, mineral depth, and a touch of tropical fruit
  • Finish: Long and lingering with a gentle smokiness, dry earth, and a clean herbal resonance

Bozal Chino Verde Mezcal holds its own beautifully in a Mezcal Negroni or a smoky Mezcal Sour, though its complexity truly shines when sipped neat and given time to breathe.

Best enjoyed neat or over a single large ice cube to let the agave character fully express itself. This expression is crafted from Chino Verde agave, a rare wild variety central to the artisanal mezcal traditions of Oaxaca.

Bozal, Spanish for wild or untamed, bottles mezcal from family palenques in Oaxaca, Guerrero and Durango, much of it from wild agave on steep, hard-to-reach hillsides. Agave is roasted in earthen pits, crushed by stone tahona or wooden mallet, fermented open-air with natural yeast and distilled twice in copper or clay. The range runs from Ensamble and Single Maguey bottlings to Sacrificio mezcals distilled with meat or fruit and clay-pot Reserva releases. For every maguey harvested, two are planted in a mountainside nursery and returned to the wild.

San José Río Minas is a village of about 200 people in the municipality of San Pedro Teozacoalco, in the Mixteca mountains west of Oaxaca City. It sits at about 1,480 meters beside a river, in forested hills planted with mango groves. Narrow dirt roads lead in over high mountains, and some palenques lie across a footbridge over the river. Mezcal here is made the ancestral way, with roasted agave mashed by hand in hollowed tree trunks and distilled in clay, often from wild Mexicano agave.
